My 20th Birthday

Yesterday my brother and I's 20th birthday. It wasn't terrible, I just stayed at home like usual, baked, ect. A few friends stopped by and my best friend came over for most of the day. So it was better than I thought it would be.

My brother is notoriously hard to shop for, impossible sometimes, so I went down to the local comic book shop to see what I could find. Well I found about 40 things I want (Including a Jason Voorhees Living Dead Doll that I can never afford) and barely anything I thought he's like. I so went with Gamer Grub, he liked the PB&J one for Christmas so I got him the 'Smores one for his birthday.


The card says "Happy Birthday Charles" in binary.

While I was at he comic shop I also saw a Freddy doll I had to get for myself, so I did. My other gifts were DVD's from my best friend (The Lost Boys & the Hannibal Lecter Two Pack), and my friends Roxy & Sage brought me a necklace. It was nice seeing them.
Well onto the food of the day.
For my birthday breakfast I made vegan pumpkin spice french toast. Yum!

Vegan Pumpkin Spice French Toast Recipe
Ingredients:
2 tablespoons ground flax meal + 6 tablespoons hot water, whisked
3 tablespoons pumpkin puree
3/4 teaspoon cinnamon
1/8 teaspoon all spice
1/8 teaspoon ginger
Pinch of clove (I was out so I didn't use any, still tasted great)
pinch of salt
1/2 (or less) soy, coconut, or almond milk
Few tablespoons flour
2-4 slices of bread 

Directions: 
1. Let flax “eggs” sit for 5-10 minutes until thick. 
2. Heat a large pan or skillet over medium low heat and lightly oil. 
3. Mix in all other ingredients with “eggs.” 
5. Spread batter on both sides of bread and lay in pan. 
6. Cook about 5 minutes per side, until golden brown.

Yum...cake....
Sadly the other day my electric hand mixer decided to suicide, it had a good 15 years, R.I.P. But luckily my friend Crash let me barrow hers (Thank You!). Way to save the day. I was not looking forward to making frosting with a whisk. 

For my brothers cake he wanted yellow cake with fudge frosting (He's the only person I know that likes that) but he wanted it from a box mix. Well simple enough I guess.

Now for what I made myself.

Vegan Red Velvet Cupcakes w/ Vanilla "Buttercream" Frosting

Frosting
Ingredients:
1/2 cup nonhydrogenated vegetable shortening
1/2 cup nonhydrogenated margarine (Such as Earth Balance)
2 1/2 cups powdered sugar
1 1/2 teaspoons vanilla extract
1/4 cup plain soy milk

Directions:

1. Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 more minutes.
2. Add the vanilla and soy milk, and beat until fluffy.

Best served w/ ice cream

Other things, I got myself some Hansen's Natural Rootbeer and Chinese food for dinner.I rarely drink soda so it made me HYPER haha.

Thank you everyone for the onslaught of "Happy Birthday" comments, emails, tweets, phone calls and texts, it really cheered me up.

    The gamer grub looks awesome. I don't think I've ever seen that, to be honest. And I what came in the Hannibal 2 pack? I would say that The Silence of the Lambs and Red Dragon (which I saw again last night) are my favorites. What's yours?
